Shrimp and Crab cakes.. life is good!

 We got this from a Brookshire's circular... and it is YUM!
  Coconut Shrimp
1/4 cup flour
1/2 tsp ground cayenne pepper
2 egg whites
2 cups sweetened coconut flakes
1/2 cup panko bread crumbs(sounds kinda weird, but you need them)
1lb shrimp peeled and deveined.
Canola Oil to fry

In a shallow bowl mix flour and cayenne pepper. In another bowl, add egg whites. In food processesor combine  panko bread crumbs and sweetened coconut flakes. Place mixture in a bowl. 1. Toss shrimp in flour. 2. Dip shrimp in egg whites, then coconut mixture. 3. In a saucepan add oil for frying; heat oil to 300 degrees Fahrenheit. 4. Place shrimp in oil for 3 minutes, or until crispy. Enjoy!
